pie 14 - raspberry with blueberries


happy birthday jeffy! your pie is at my house.

I decided to try to make my own pie tonight, and I guess we'll see if it works!

I blind baked the pie crust (one I had made before, and kept in the freezer). While it cooked I brought raspberries and a handful of blueberries to a boil with some sugar and three tablespoons of corn starch (as a thickener). I let it boil, stirring constantly, for a bit more than 2 minutes - until it started to get really thick, jam-like.

I put some raspberries and blueberries (whole & uncooked) in the pie crust and poured the cooked mixture over top. It's now resting, and I'll transfer it to the fridge shortly.

I probably should have put some butter on top, but I forgot, and it's already setting! A bit of whipping cream on top, should sort it out.

pie 13 - George's Blueberry Pie



I don't actually like blueberries very much. I mean, they're okay in smoothies, cause they're smooshed up, or randomly in pancakes or muffins. But - OHMYGOSH - this one was DELICIOUS! And the extra good news? I used frozen blueberries, because that's what Martha's brother, George, does for his recipe.

I'll bring this in to work tomorrow - I did find it a bit runny - so I'll have to be careful. Maybe it'll thicken up a bit overnight. I used the star cookie cutter again because it looks so nice.

pie 13

since it's less than a week to our Jamaican holiday, I think I'll use one of the frozen crusts that I've already made, and whip up a blueberry pie... shouldn't be very difficult, right? let's see what kind of time i have this week, and otherwise, will add it to the list of pies i'll be making when I get back.

pie 12 - peanut butter pie


i made this pie twice, but will only count it once. the first time, i accidentally made it with cooking pudding, instead of instant. this time was a much bigger success.

it was light and fluffy, but creamy and oh so yummy.

pie 10 & 11 cherry & apple

by request, i'm bringing two apple pies and a cherry pie into ladies at work.

the cherry one looks fantastic! i had no idea that i'd be able to do the lattice... but i did! and it looks great. i really think i'm becoming a pie crust master. there was a slight issue on friday, when i was making the pie for rachel and paul's, but i rolled it out onto saran wrap, and it worked like a charm!



also, it's very hard to find frozen sour cherries in the greater vancouver area, and when i went back to the store, to pay more money on cherries than i'd collect from the pie, they were sold out! *rage* but that's sorted now, and the pies look great. i hope the ladies are happy with them tomorrow!!

i'll post a pic of the pie tomorrow evening. for now: bed!

i made a blackberry & apple pie for rachel and paul's christmas party. success! i made it with a star top (because i didn't have a leaf cookie cutter). picture coming soon.

banana cream pie

the instructions aren't super clear on this, but I guessed on the timing (having never made pudding before) and it worked out well.

the first crust I made I burned. oops! luckily we had an extra egg and I remade it. really - a super easy recipe. and tastes good too. I didn't have coarse salt, so I just used a pinch of regular sea salt.
