I decided to try to make my own pie tonight, and I guess we'll see if it works!
I blind baked the pie crust (one I had made before, and kept in the freezer). While it cooked I brought raspberries and a handful of blueberries to a boil with some sugar and three tablespoons of corn starch (as a thickener). I let it boil
I put some raspberries and blueberries (whole & uncooked) in the pie crust and poured the cooked mixture over top. It's now resting, and I'll transfer it to the fridge shortly.
I probably should have put some butter on top, but I forgot, and it's already setting! A bit of whipping cream on top, should sort it out.
