worm pie

with Hallowe'en coming, my work is having a potluck for lunch tomorrow and a pumpkin carving contest. since dirt pie with worms was on my list, it seemed the perfect time to make it.

it was super easy to make, there were a few steps, but really - just rinse the kitchen aid after making the pudding, and then mix up the cream cheese, butter and icing sugar.

i used this recipe from Cooks.com except that i didn't add the dark chocolate chunks, since i couldn't find them at the newly renovated grocery store.

DIRT CAKE - WORM PIE

1 pkg. (20 oz.) Oreo cookies
2 (3 oz.) semisweet candy bars (Special Dark), chopped
1 cube butter, softened
8 oz. cream cheese, softened
1 c. powdered sugar
2 (4 oz.) pkg. instant chocolate pudding
3 c. milk
1 (8 oz.) Cool Whip
Gummy Worms - as many as you want

Crush cookies in food processor or blender, a few at a time to allow them to crush fine for dirt. Add candy bar pieces; these are the rocks. Set aside.

In a medium bowl, cream butter, cream cheese and powdered sugar. Beat 2 minutes.

In a deep narrow bowl, beat pudding and milk until they thicken, about 2 minutes. Fold in the Cool Whip. Then fold in cream cheese mixture.

In a 13 x 9 x 2 inch or slightly larger pan, layer as follows:

1/3 cookie mix in bottom (sprinkle)
Add a few worms
Spread 1/2 pudding mix on top
Cook mix (sprinkle)
Few more worms
Remaining pudding
Top with the cookie mix to give appearance of dirt

Cover the pudding as best as possible and don't flatten. Just sprinkle cookie mix. Cover with plastic wrap and refrigerate overnight. Toothpicks can be used to keep topping from being smashed by the plastic wrap. (It is crazy, but it is good!)

<img style="display:block; as the base for the pecan pies, and for the butter tarts. why not a martha recipe? cause butter tarts are canadian!

as an experiment i used the last little bit of rhiannon's blackberry jam, and the last bit of a jar of strawberry jam that i made this summer. it worked out really well because rhiannon's jam was chunky, and my strawberry jam wasn't super smooth, so it had that pie feel to it. i didn't add anything to the jam, because it was already decently solid. so i just popped them into the oven and let the crust get browned.

resist temptation to eat this right out of the over - they are SMOKING HOT. gerry thought a dollop of ice cream would have been awesome on the jam pies.

<img style="display:block; (which is like a pudding, but not exactly) needs to be whisked before you put it between the cake layers. otherwise, it will be lumpy... still tasty, but not the right texture.

i don't like boston cream donuts, but this pie/cake was super delish. i suspect it has something to do with the quality of chocolate topping, and on this one, it is quality.

i'm going to bring this pie to work and ask for donations to the BC Cancer Society for pieces of it.

pie 41 - lemon meringue pie

gerry and i went over to joanna and aaron's for carcassonne and an attempt at euchre. we ended up having snacks of cheese and an amazing pepper jelly. so. yum. and so was this pie.

normally i use a deep dish, but this time i used a regular size one, and it made the crust that is such a solid recipe. i had one in the freezer so i took it out yesterday morning to let it defrost. then last night, i rolled it out onto a dish, covered it with saran wrap and put it back in the fridge.

2. the topping - a crumble topping from a blueberry pie recipe on the martha website.

3. bits of a recipe from a big pie book, with a lot of changes. i started with 6 cups of blueberries, 1 cup of sugar, a squeeze of half a lemon, and 4 tablespoons of corn starch. to change it up a bit, especially because i was using a deep dish, i added some more blueberries, maybe another 2 cups. to thicken it up, i added another tablespoon or two of corn starch, and then some cinnamon and cloves for flavour.

i let the filling boil and really thicken on the stove, while the crumble was in the fridge, and the crust was cooking. i didn't cook the crust all the way, but got it started on golden. then i dumped the really thick filling in, and topped it with the crumble, let it bake until the crumble was browned, and the crust was too.

now, it will get wrapped up, and sent to the island with rhiannon. hope you like your pie, karl.

pie 27 - orange pie for karen

<img style="display:block; I let it boil, stirring constantly, for a bit more than 2 minutes - until it started to get really thick, jam-like.

I put some raspberries and blueberries (whole & uncooked) in the pie crust and poured the cooked mixture over top. I mean, they're okay in smoothies, cause they're smooshed up, or randomly in pancakes or muffins. But - OHMYGOSH - this one was DELICIOUS! And the extra good news? I used frozen blueberries, because that's what Martha's brother, George, does for his recipe.

I'll bring this in to work tomorrow - I did find it a bit runny - so I'll have to be careful. Maybe it'll thicken up a bit overnight. I used the star cookie cutter again because it looks so nice.

pie 13

since it's less than a week to our Jamaican holiday, I think I'll use one of the frozen crusts that I've already made, and whip up a blueberry pie... shouldn't be very difficult, right? let's see what kind of time i have this week, and otherwise, will add it to the list of pies i'll be making when I get back.

pie 12 - peanut butter pie

<img style="margin: 0px auto 10px; YAY!

Super easy to make - not many ingredients and not very time consuming. It's a shortbread kind of crust and the extra sweetness comes from the jam.

The crust is enough for at least 2 pies. You can use it to make cookies too. This is a recipe from Silvia, I've made notes in brackets.

600gr of flour

400gr of butter

200gr of sugar

1egg yolk

Mix everything with your hands, it'll look like crumbs at the beginning but keep working it and the butter will soften and then it'll stay together. I let the butter soften a little and then cut it into small pieces and mixed it in.

Let it rest in the fridge for a day and then shape it (I used a regular pie dish, but springform works too) add jam on top and put in the oven at 200 degrees celcius for about 30 mins (the first pie I cooked at 400F, but it only took 20 minutes, so I'm going to do the second one at 350F and see how it goes).

Let it cool and then serve.

For one pie I used raspberry jam I made last year, and for the other, strawberry freezer jam that Toutou made.

*** NB: I take back any hesitation I may have articulated. having cooled, this pie rocks! YUM!!!

jam pie

to celebrate my birthday, i'm going to bring in a raspberry jam pie. maybe it doesn't technically qualify as a pie, but it kind of looks like one.

i'm going to use silvia's recipe, and the raspberry jam i made last year.

week 6, steak &
